I'm in the manga crowd more than anime in general, as a general disclaimer, but I have definite preferences. First of all, I'd love to see the rest of Amatsuki animated! It's a lot less likely than getting more Titans, especially since it's been years now, but I seeing my favorite scenes animated, and I would be so happy seeing Ginshu's backstory in anime form. Um… I'd say Tales of Innocence, but the manga and the remake make me kind of wary about how they'd handle certain things. But a Tales of Destiny: DC anime series? Especially with Chaltier animated? Yes, please.

…I guess that really kind of jumped ahead and did this backwards. In general, what I desperately want out of anime is the same as what I desperately want out of any media: casually queer/genderqueer/trans characters who have depth and importance and are treated with respect by the narrative. Preferably in sci-fi/fantasy.
